Mixin’ Tomatoes w/ Bacon Sandwich


Two slightly large tomatoes

Light Sour Cream = ¼ C.

Thin sliced Green Onions=1

Crushed Garlic Gloves = 1

Cayenne pepper = 1/8 tsp

Ground cumin = 1/8 tsp

Sandwich-style whole wheat bread

Spinach leaves = 2 C.

Turkey bacon =-8 Slices

Shredded Mexican Blend Cheese Reduced = ¼ C


First thing you want to do is turn on your broiler. Take the large tomatoes and begin to slice them. Take one of the tomatoes or both and remove the seed and chop up the remainder of tomatoes which should give you ¼ cup of tomatoes. Combine the chop tomatoes with ¼ cup of sour cream, and then add it with the remaining ingredients which is 1 sliced green onion, the crushed garlic glove, 1/8 teaspoon cayenne pepper and ground cumin, into a bowl and put aside.

Take the whole wheat bread and place it on a plastic or aluminum sheet. Place the bread slices in the middle of your broiler or 4 to 5 inches away from the broiler. Toast the bread for 2 to 3 minutes and turn over once. If you want you can set aside some of the spinach leaves for an additional topping. Place the mixture from the above step and spread it on the slices.

For the last step add the cheese and the additional spinach leaves, and then place back in the broiler for 1 to 2 minutes or until the cheese is melted . This recipe makes 4 sandwiches.
